Thank you so much for this information! I love to make homemade pizza and I was puzzled why my pizza dough had gone loopy. I live in the South and the humidity here is stifling. I roll a dehumidifier around my apartment to use in the different rooms to reduce humidity. I can't afford to run the air conditioner. It's not uncommon for the temperature in my kitchen to reach 86° with the oven on. Now I know that I don't need to add more flour, I need to add less water that is at a lower temperature!
