Our favorite fruit to roast is pineapple. Sometimes we roast it by itself, but often we roast it with a mix of potatoes and red peppers. All are cubed fairly small (1 inch) and tossed in a little salt and oil. It is a bit of a cheat on kabobs, but the diced veggies and pineapple cook more evenly for me this way. We love the sweet pineapple / salty potato combo.
