We haven't tested it with sugar replacers but you're welcome to experiment, Debbie! We expect that the texture will be different and that it may not set up quite the same. As for the cornstarch, we would not recommend using xanthan gum. If a corn allergy is the issue, replace it with all-purpose flour. Annabelle@KAF
