Hi Tammy, we tested this recipe with half-&-half to see what would happen and the result was a super rich, thick pastry cream. While we didn't make a batch with heavy cream, we think it would work if you're okay with a thicker result. It might be nice to lighten it up by folding in 1 cup of whipped cream. This will loosen up the texture as well, making it softer and easier to use in some applications. Enjoy! Kye@KAF
