If you're looking to make banana pastry cream, we recommend using the filling part of this recipe here for Banana Cream Pie. Otherwise, you could add 1/2 to 1 teaspoon of banana extract to your finished pastry cream and also fold in about 1/2 to 1 cup of banana puree at the very end of making the base recipe (once it's off the heat). The riper the bananas you use, the more banana-y it will be. Happy baking! Kye@KAF
