Hi Georgia, were you able to weigh your flour, or did you measure by cups? It's easy to add extra flour when measuring by cups, which could definitely have played a part in your hockey pucks. For best results, we recommend either weighing your ingredients, or measuring your flour using this method. I suspect that your oven fan and elevation may also be making popovers a bit trickier to accomplish. While we don't have precise modifications for adjusting this recipe at your altitude, you may find some helpful information by consulting our High-Altitude Baking Guide. The extension services we list at the beginning of this guide may be particularly helpful when it comes to baking popovers, as they are the true experts when it comes to high-altitude baking.
