If you are not using commercial-quality baking pans, such as the Chicago Metallic popover pans, you're making life difficult for yourself. Buy a couple of those 6- or 12- cup nonstick pans and I;m sure you'll see the difference with your first batch. I spray my pans **very lightly** with a commercial product called Vegalene, but any baking spray will work just fine.
