I love baking popovers and use your recipe always! I sometimes leave out the butter (because I'm forgetful) and they still come out great. I use the blender to mix everything - less clean-up. I also will sometimes put a cube (think sugar cube size) of cheese in the pan to make cheese popovers. Delightful! Cheddar is better. I use the mega muffin pan to make six, and I do keep extras in a paper bag in the microwave and reheat them the next day since there are only two of us. I can't wait to try the mini-ones, never thought about doing that. They will be perfect with lemon curd when I'm on church hospitality.
