Popovers are quite delicate and the air circulation of the convection setting may result in mishappen popovers, so we don't typically recommend using it in this case. Next time try baking a batch with the convection setting turned off to see if that helps improve the final result; just keep in mind you want your oven to be very hot and fully preheated (longer than the cycle signal beep!).
