Good thinking, Mark! We like the idea of making warmly spiced cream puffs. Chai, cinnamon, gingerbread, or even pumpkin pie spice — they could all be used to flavor your choux dough. Start with a small amount (about 1/2 to 1 teaspoon depending on the size of your batch) and increase to taste. Happy baking! Kye@KAF
