Growing up, Mom made this "Crazy Cake", as she called it, frequently. It was my Dad's favorite cake-therefore made every couple of weeks. Sometimes she topped it with peanut butter frosting, but it was usually just served with a sprinkle of powdered sugar on top, or whipped cream, or a scoop of vanilla ice cream. When I married, my husband was allergic to eggs and dairy so this became a go-to recipe for me as well. In more recent years, I've had to be gluten free and have continued to make this g.f. adapted recipe. I guess it's been my "life cake" as it has followed me from childhood! My Mom even had a special "Crazy Cake" pan-she always mixed it in the pan-which I asked to inherit. Good memories. Great cake.
