As a follow-on to my first question- it would be helpful to see what the underside of your shaped boule looks like. I can get the surface tension, but the underside is a series of little wrinkles that are not sticking together. The only thing holding the tension is the weight of the boule on the wrinkles, so when I turn it “seam-side up” to place in a proofing basket, the little wrinkles open up and the tension on the [now] bottom is lost.
