I continue to try to try to improve my baking. One big step forward was realizing that I was letting the final rise go too far. Now I'm working on the shaping of the boule. My problem is that my right hand and arm is largely useless due to severe nerve damage so I am am trying to apply force almost entirely with my left hand alone. Any ideas for modifications to any of these techniques that might help? I bake in a dutch oven with the cold start technique because it's easier for me.
