Hi there, Sherri! You sure can do it that way if you'd like! You might also let the shaped loaf proof in a towel-lined bowl seam side up, and then turn out onto the parchment before lowering it in the preheated Dutch oven. With either the parchment or towel-lined bowl, we would recommend dusting it with flour to prevent sticking. Happy baking!
