Something else I forgot to mention was that I also have reduced the amount of sweetener (typically, I use honey) by half. I hadn't mentioned that because I do this regardless of the room temperature. However, I think that reducing the amount of sweetener could be another way to slow down fermentation by making less simple sugar available to the yeast.
