Hi Larry, although the 30-minute rest may affect the temperature of the dough somewhat, there's really no way to add this to the desired dough temperature calculations. The dough will likely gravitate more towards room temperature during this period, but that is already factored into the formula. Refrigerating the dough and reducing the yeast amount are both effective ways of slowing down fermentation. Thanks for sharing these methods!
