Hi Adrian, our Parker House Roll recipe has you heat up the milk/egg mixture so that it's about room temperature, or a bit warmer if your house is on the cool side. While you'll want to be careful not to heat this too high, you could use your warmed up temperature as the liquid temperature you're aiming for. Although this recipe has lots of ingredients, most of these will be at room temperature, so your DDT formula could be centered on determining the desired milk/egg mixture temperature. To avoid making scrambled eggs, I would heat up the milk first (a little warmer than the desired temperature), and then stir in the egg and check the temperature again. If need be, heat it up a tiny bit longer.
