Thank you for the helpful response! If I decide to do an overnight rise on my kitchen counter (10-12 hours), do I have to worry about over-proofing if I calculate the DDT formula correctly? Also, I keep my instant yeast (red SAF brand) in the freezer. Does that affect fermentation whether I refrigerate or leave out at room temp?
