Thanks so much for this information - I'm finally getting a nice rise at home. I live in an always cool, north-facing condo, and I'd done things to increase the temperature of where I put the dough to rise (big fan of the cup of water in the micro trick). However, I'd been using filtered water from my pitcher in the fridge this whole time <facepalm>. Now that I'm warming my water, things are going much better, since I'm one of those impatient souls who hates waiting longer than the given rise time.
