Hi, I just came across your blog post and I learned so much so thank you very very much. I would appreciate if you can help clarify this as I tried to search on the web and YouTube and I have not found a very reliable explanation. Once my dough is kneaded in my Thermomix. I put it in my proofing drawer next to a cup of hot water because my house tends to run cool in the winter time (71F). Should I take into account the temp in the drawer or should I stop complicate things once DDT has been reached?
