How Paul, a lot will depend on the ratio of rye flour to white flour, and what type of rye flour you're using, but I would say 66-67% is a fairly common hydration for deli rye bread recipes. Rye flour benefits from a fairly moist dough, and a wholegrain rye flour like our Organic Pumpernickel Flour will absorb more liquid than white rye flour.
