Hi there, if your dough comes out too warm it's fine to stick it in the refrigerator for 30 minutes or so to cool it off. Give it a fold when you take it out of the refrigerator to even out the temperature. If the dough is a bit too cool, but your house is in the mid-70's, it will likely come up to temperature gradually. Otherwise you can find a warm spot to help it along; check out this blog post for some ideas about where to let your dough rise. Barb
