Hi JoAnn, we're glad to hear you were able to use the DDT formula with good results, despite your difficulties achieving a low enough water temperature. You might try adding ice cubes in with the water to reduce the temperature; just be sure all the ice has melted before you mix your dough. I'm curious why you were aiming for such a low dough temperature (64 degrees)? Do you live in a tropical climate? Barb
