Hi there, the autolyse method complicates the DDT formula slightly, since during the duration of the autolyse, whatever water temperature you use will slowly gravitate towards room temperature. I would suggest using slightly cooler water than the formula indicates if you're baking on a warm day, especially if you're incorporating a longer autolyse. The opposite would also be true--use slightly warmer water if your room temperature is cool and you're planning to use an autolyse. I'm guessing probably just a few degrees colder or warmer will be enough to adjust for the effects of the autolyse. Barb
