Hi Tom, consistency is definitely the greatest challenge facing bakers! I agree with Susan, that your dry summer air may cause your flour to soak up more water. You could also try adding a bit more water to the dough if it feels stiffer than usual. Finding a nice, moist location for the dough to rise may also be helpful. You could try using the microwave/proofer trick, by boiling water and then placing it in the microwave to create a warm, moist spot for your dough to rise. Or simply be sure that your dough is covered well, so that it doesn't dry out while it rises. Barb
