Thank you so much for the information in this post. I never would have thought that basically room temperature water (I live in the South) could be used and really work. I tried it this morning and was amazed at the results. I kneaded in my Kitchenaid mixer and the bread is in the oven now. The rise was only a bit longer than with heated water but how convenient. Great information!
