Do you think it's possible your cake had a dense, gluey streak like the one shown in this article about troubleshooting cake? Sometimes over-creaming the ingredients together produces this gooey section that doesn't bake properly, despite the rest of the cake looking done. Since this method uses what's known as "the paste method," rather than a traditional creaming method, it's possible that the ingredients weren't evenly incorporated (some ingredients stuck to the sides or bottom of the bowl and didn't get mixed in fully), or perhaps some of the ingredients weren't at room temperature.
