I am getting ready to do a trail run for my baby shower cake and I'm pretty sure I have most of the process down. The part I am a little confused about is icing the middle of the cake (which probably isn't a make or break thing, but I want it to look the best I can make it). I pipe a dam with plain buttercream, spread raspberry jam, then I spread the raspberry buttercream over that. However, it appears that there is also a layer of the plain buttercream on top of that. Is this correct? Also, I've never frosted a layer than flipped it over, is it possible to do this another way? Thanks!
