It is difficult working with paleo, keto, and gluten free flours. I would suggest using a 1/2 tsp of xanthan gum to this recipe. I made them and they came out perfectly. I used their keto flour. Xanthan gum helps them rise and keep their shape. It helps to trap those little air bubbles so that they don't pop and lose its rise. I hope that makes since :)
