Interesting, Keri. It might just be an opportunity to cover them up and let them rest to relax the gluten before baking. Maybe it's to trap some of their moisture in so they don't dry out in the air. It's also entirely possible it's what someone's grandma said to do and no one really knows the real reason! It wouldn't hurt to experiment with it. Annabelle@KAF
