PJ, I love to experiment with biscuit recipes.Thanks for your great tips. Yes, I have a tried and true recipe. Last week I found a recipe that was LOADED with butter and used both AP and CAKE flour to kinda mimic that Southern flour. I used Land O Lakes EXTRA CREAMY butter. The result was a biscuit that tasted deliciously buttery but had a pooled bottom; much like a top hat. Don't know if it was the high butterfat content of the butter or just TOO much butter. Back to my tried and true recipe. Next.....
