I’ve always heard you shouldn’t open the oven while baking meringues (most recently from my grandmother who warned my pavlova would deflate if I opened the oven, just before I opened the door and my pavlova deflated). But how else are you supposed to check if they’re dry?? It didn’t seem to matter when I’ve made kisses.
