I have made my husband's favorite dessert "Schaum Torte" which his mother made for years every year for is birthday. It is basically a Pavlova but instead baked in a springform pan. After baking the meringue is removed and the sweet sticky interior is the base of the dessert on which fresh unsweetened strawberries are heaped and then the strawberries are piled with a whipped cream. The crisp meringue which was removed once the springform cooled from the oven and set aside is then piled on top of the whipped cream. It is truly a beautiful and decadent dessert. The recipe follows your rules for meringue exactly. It really helped when I got a new mixer as you really do have to beat the egg white in the Shaum torte recipe until they resemble cream cheese. Once I figured that out my Shaum torte meringue came out perfect.
