Hi there, Kathryn! We're sorry to hear about this experience, this isn't something we've had happen before. Could the meringue not have been fully whipped yet and not quite stable enough? You most certainly can use lemon extract to flavor your meringue though, extracts are usually less intense than oils so you'll likely need a touch more. Best of luck and happy baking!
