Hi Jadzia! After baking, we recommend letting meringues cool in the oven with the door propped open for 30 minutes. This allows the meringues to finish baking and cool slowly with the oven. If the meringues are cooled at room temperature they'll likely be chewier than expected. We hope this helps!
