My favorite way to enjoy meringues? Eton Mess! In almost every pastry shop and bakery in England you see the windows filled with piles of colored meringues the size of a 3 egg omelet! Pink, pale green, sky blue--towering pyramids of fragile sweetness. Crack them up into bite-size chunks, fold in huge blobs of unsweetened cream and sliced strawberries. Oh my--heaven on earth!
