Hi Helen. I prefer to use the oven just because it tends to give the meringue a more evening browning than a torch. I've used both though, and a torch will do the trick, it just requires a little trial and error to see how far away to hold the flame for ideal browning. I usually reserve my torch for crème brûlée and stick with the oven for meringue. Annabelle@KAF
