There are so many recipes that call for yolks, V-Gal, but my personal favorites would be Pastry Cream, Lemon Bars, and Key Lime Pie. And freeze away! Just keep them in an airtight container and they'll freeze for up to 3 months. Let them thaw and come to room temperature before whipping for best results. Happy meringue baking! Annabelle@KAF
