My Mother cooked for a Hotel in the Florida Keys in the early 1960's. Her Key lime pie called an Angel Lime Pie was baked in a meringue crust with more meringue on top. It was pale green and awesome. I have her recipe on the Hotel's stationery, if I could post a picture I would. On one occasion some person flew a small private plane from Michigan to get two of them for a party! Of course gasoline was .25 cents a gallon then. I have never had the nerve to try her recipe. She was baking them in a hot kitchen fifty feet from the Atlantic Ocean where humidity abounds! I have my own chickens, so eggs are plentiful and we have a Key lime tree. Thanks for getting me over the fear.
