My favorite way to use meringue is for cookies (3 eggs whites, 3/4 cup of sugar (I'll use the super fine sugar the next time I bake them), a 1/2 tsp of vanilla or almond). When I use almond extract I add sliced almonds.. My mother added Frosted Flakes, almonds, and coconut. I add milk and or semi sweet chocolate chips. My mother's recipe calls for cookies to be baked at 300 degrees for 20 minutes.The cookies are crisp on the outside and soft on the inside. Love KA Flour, especially the scone mixes.
