My favorite recipe for topping a meringue pie is the “soft meringue topping I” from Joy of Cooking. It involves making a cooked cornstarch paste with a tablespoon of cornstarch, a tablespoon of sugar, and 1/3 cup water. The cooled, thick paste is gradually beaten into the meringue at the very end of the process. I wrote “luxurious” in the margin.
