Thank you for de-mystifying merangue! Someday I'll attempt to re-create my late mom 's heavenly lemon and coconut pies. I have already made a few " not bad " banana puddings. Now maybe I can do better. I do remember the cream of tartar trick from my late Uncle Jack, an army -trained cook in WW II who once baked a cake for Eleanor Roosevelt, who visited his unit. However, I must have missed the amount to add to the egg whites, please clarify. Thanks!
