When getting ready to make meringue .. my #1 rule is to wipe down the Bowl and the beaters with vinegar .. gently wipe with a paper towel but not necessary to completely remove the vinegar (in fact, the bit of vinegar that's left on those items is the 'acidity' needed for the egg whites to become beautiful, billowy meringue)!
