I love meringue on lemon pies but have very little success. The oven temp and the time needed to bake the meringue varies so much from recipe to recipe... I see that you talk about low and slow but the Lemon Meringue Pie recipe you link to says bake at 400 for 8 to 10 minutes. I am thinking based on your post that I should reduce that temp and extend the time to bake meringue on pie. I will try adding the cornstarch to help control the meringue weeping...
