Thanks for the wonderful article. I have a concern about my gas oven. I know for a fact that it really does have hotspots (whenever I bake eclairs, the front ones near the oven door always deflate because it's much colder up front than at the back where it could get really hot). I was thinking of getting a pizza stone to even out the heat at least to some degree. Since the heating element is at the very bottom, where should I position my pizza stone? Should I put it directly above the flame/lowest rack, or do I bake my goods directly on top of the pizza stone in the middle rack i.e. putting the cookie tray/cake pans directly on top of the pizza stone? I hope you can give me advice! Thanks!
