As a kosher baker I very much appreciate this.Last summer I took a pie class at a well known culinary school and when I asked the chef what he would suggest instead of butter for non dairy baking his response was, "Don't even bother baking in that case." Needless to say I'm not giving up pie for thanksgiving or any other dessert just because it has to be non-dairy.
