Hi Kris, a lot depends on the ingredients in your bread recipe. If you're making an enriched sourdough bread recipe like our Sourdough Sandwich Bread recipe, you would likely want to bake at a lower baking temperature 375°F. However, if you're making a more traditional sourdough recipe that is primarily composed of sourdough starter, flour, water and salt then you could certainly bake at the temperatures you listed. Most often we bake crusty sourdough breads at 450°F, but for this type of recipe it's very important to add steam to the initial part of the bake. This helps keep the surface of the loaf moist and flexible so your bread can expand fully. It also helps achieve a crisp, golden crust.
