I use my bread machine for the kneading and rising. Then, because I prefer the shape of a regular loaf pan, I remove the sourdough from the machine, knead it, shape it, and set it for the final rise. I want to know the best temperature to set the oven at for baking. I’ve used 465 degrees for 20 min., then reduce to 430 degrees for 15 min. longer. However, the loaf seems hard and dry.
