The lemon juice just aids the structure in the rising process. I've had terrific results with it and tasted no lemon flavor. Try it - it's all just a few cents worth of ingredients especially if you use the yeast in the jar. I always do - it's much more economical and fresher as long as you store the jar in the fridge.
