When my children were small, I used to bake 8 loaves at a time by hand, and was left with great bread but an incredible mess. Now I use a bread machine on the dough setting. Since I live in Arizona, most of the year I can knead the dough and put it outside to rise. This makes great white bread always using the same recipe. Sometimes I make raison bread that uses water instead of milk, but I find that using the basic white bread recipe and adding things like dried apricots (after soaking them) works fine. What I would really like though, is a way to make banana bread that is real white bread with lots of banana. I've tried all sorts of ways of adding the banana, but none of them work well. I'd appreciate any ideas.
